“Cachapas” Venezuelan Corn Pancakes

Cachapas are Venezuelan traditional "pancakes" made mainly with fresh corn. However when abroad is difficult to find the same type of corn used normally to prepare them. Thought this "version" contains few different ingredients, the results are very close to the real ones in flavor and texture... Instructions
  1. In a mixing bowl add the melted butter, egg, corn muffin mix and cream of corn, mix all until well combined. If the mix looks to thick, add milk until the consistency will be less dense. (Be careful not to add to much as it will be to liquid to cook it)
  2. In a hot and greased non-sticking frypan add a portion of the mix and cook on a medium heat. When little holes start forming on the top side, is time to turn it around, let it cook for a little bit more and remove. Repeat the process for the rest of the mix
  3. Sheared some white cheese and eat when they are still hot. Normally we eat them with butter and cheese only, but it is up to everyone taste. I like to add honey or some syrup or fruit jam
