
I been experimenting with a couple of dates recipes, some were to dry and others to sweet; but nothing was really that yummy so I decided to create my own.
So far is my favorite one, is perfectly balanced and moist and I'm happy to share it with you all.
It's really easy to make, only few ingredients, and the best of it "NO SUGAR added" which is really good for the ones worried about the few extra calories.

Ingredients
- 1 Cup Water
- 250 grs Dates
- 1 tsp Baking Soda
- 1 Tbps Butter
- 1 3/4 Cups All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 Large Egg
- 1 Cup Full Fat Buttermilk (Laban)
- 1/4 Cup Dates Syrup
- 1 Tbsp Vanilla Extract
- 2 Tbsp Corn Oil

Instructions
- Preheat the oven at 180°C
- Cut the dates in halves and remove the seeds
- Add the water in a small saucepan and bring to boil, add in the dates, butter and baking soda. (Watch for the baking soda reaction, the mix will increase in size for a while but is normal)
- Reduce the heat and simmer until the dates are soft (10 to 15 min)
- Smash the dates into a paste, does not need to be perfectly smooth. Set aside to cool
- In a mixing bowl combine egg, laban, vanilla, oil and dates syrup and set aside
- In a separate bowl sift in the flour, salt and baking powder. (add extra dates cut in small pieces or any nuts if you prefer a more chunky bread)
- When the dates mixture have cooled, stir in the liquid ingredients and mix well
- Fold in the flour into the liquid mix and stir until well combined
- Pour the mix into a loaf pan of your preference
- Bake at 180°C for 20 to 25 min
- For decoration I used my basic buttercream recipe and added some dates syrup to it. Garnished with my pecans-caramel crunch and some dates on top
Recipe Notes
Tips:
- Baking time will depend on the size of the loaf pan you use.
- The taller and bigger the pan the longer the baking time.
- Test with a toothpick, it will be ready when it comes out clean.
- Add intervals of 5 min if you need extra time.
- Don't overcook as it will be to dry
