Ingredients
- 250 grs Butter Softened
- 3/4 Cup Packed Brown Sugar
- 1/2 Cup Sugar Remove ¼ for less sweet cookies
- 1 Large Egg
- 2 tsp Vanilla Extract
- 2 1/2 Cups All Purpose Flour
- 1 Cup Quick-cooking oats
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
Servings: Cookies (3 Inches Cookies Approx)
Instructions
- In a food processor add the flour, oats, baking soda, cinnamon and salt and blend well until all the oats is fine and mixed with the rest of the ingredients
- In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Gradually beat the flour & oats into creamed mixture
- Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll
- Preheat oven to 180° C. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a cookie cutter of your preference. Place 1 in. apart on greased baking sheets. (I used parchment paper)
- Bake 9-11 minutes or until edges are light brown. Remove from pans to wire racks to cool completely
