Instructions
  1. In a food processor add the flour, oats, baking soda, cinnamon and salt and blend well until all the oats is fine and mixed with the rest of the ingredients
  2. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Gradually beat the flour & oats into creamed mixture
  3. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll
  4. Preheat oven to 180° C. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a cookie cutter of your preference. Place 1 in. apart on greased baking sheets. (I used parchment paper)
  5. Bake 9-11 minutes or until edges are light brown. Remove from pans to wire racks to cool completely
